Description

Erythritol is a polyol (sugar alcohol) that occurs naturally in fruits like pears, melons, and grapes, and can also be found in other foods like mushrooms, as well as in wine, soy sauce, and cheese. Erythritol is a white crystalline powder with a pure and refreshing sweet taste, similar to that of sucrose. Erythritol is about 70% sweeter than sucrose; it has good fluidity because it is not hygroscopic. Erythritol has a caloric value of 0 calories/gram, and a high level of digestive tolerance sets it apart from other polyols. Erythritol is rapidly absorbed by the small intestine and rapidly digested by the body within 24 hours, so the laxative side effects that can occur with excessive intake of polyols are unlikely to occur when consuming foods containing erythritol.
